If you really want to protect your email for some reason, it is not that hard.

Most important is too never do something you will regret. That includes snail mail.

Offshore email accounts such as those provided by novo-ordo.com may help. They encourage the encryption of email messages, force the encryption of envelope information (from, to, subject) and are outside the reach of the U.S. government.
